If ever there was a poetic fruit, pears are it. Possibly pomegranates, strawberries, peaches, grapes, and certainly mangoes. Well, there goes the plug for my poetic pear.

Mom's Black Beans and Rice


Oh!  How I love this meal!  It's one of my favorites.  My mom used to make it when I was little.  The Molho is essential for the overall experience.  My mom's method is more or less dump and taste.  While this recipe is amazing as it is, feel free to add the flavors you love.  

1 pkg.  Black Beans
1 onion, chopped
1 bay leaf
oregano
Salt & pepper to taste
1-2 lbs sausage and keilbasa

Directions
Soak beans overnight in cold water.  Drain and rinse.  Cover again with water and bring to a boil.  Cook until beans are tender (abt 2-3 hours) Add onion, bay leaf, oregano, salt and pepper to take.  Also add ham or sausage.  Cook another hour or two.  Remove bay leaf before serving.

Serve on white rice.

Topping (Molho)
Chop up 1-2 cucumbers, 1 onion, 1 green pepper and 3-5 tomatoes.  Add 1 8oz bottle of Zesty Italian dressing.  Sprinkle on top of the beans.  It adds so much to this dish!

Note:  If you like garlic, add some—it makes this recipe even better!
