My hubby loves raisins, and he loves this cookie! When we were first married we were just living on pennies and love! One Christmas morning, at about 4 o'clock, I secreted away to the kitchen and made these cookies for him. He hadn't had them in years and years and was so surprised that they tasted "just like his mom used to make." Maybe that was because they were her recipe! Since then, these cookies have been traditional and still make me smile when I think of them. (Although I don't love cooked raisins. But the possibilities for fillings is vast! Raspberry, strawberry, blueberry, coconut, chocolate... who knows!)
Cookie
2 1/2 c flour
Pinch of salt
2 tsp. baking power
1 cup sugar
1 cup butter
2 eggs
1 tsp. vanilla
1 TB evaporated milk
flour (for rolling cookies)
Filling
2 c. raisins, ground
1/2 cup sugar
1 cup water
1 TB cornstarch
1 tsp vanilla
1 TB butter
Cream butter and sugar, add eggs and vanilla. Mix in blended dry ingredients, alternating milk and flour. Roll out with flour and cut into circles. Mix together filling ingredients in a saucepan. Bring to a boil. Thicken with cornstarch. Add vanilla. Put a TB of filling on a dough round, and top with another round. Press down edges. Bake at 375* for 10-12 minutes.
I love food! I love sweet pepper sauce and I've always had a love affair with D'anjou Pears. Hence the Blog name. But it could have just as easily been something to do with my other favorite ingredients, like coconut, almonds, nutmeg, sugar peas, mangoes, chocolate, cilantro, tomatoes, olives, pasta... well the list goes on and on.
Poetry
If ever there was a poetic fruit, pears are it. Possibly pomegranates, strawberries, peaches, grapes, and certainly mangoes. Well, there goes the plug for my poetic pear.
