My mom's coconut bars!!! I really don't need to say anything more.
1/2 c. butter
1 c. Brown sugar
1 egg
1 tsp vanilla
1 1/4 sifted flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp. nutmeg
1 c. coconut
1 c. oatmeal
1/2 c. nuts
Cream butter, sugar, egg, and vanilla. In separate bowl mix flour, baking powder and soda, salt, cinnamon, and nutmeg. Add to wet ingredients. Blend well. Stir in oatmeal, coconut and nuts. Bake at 350* for 12 minutes in a jelly roll pan (cookie sheet).
I love food! I love sweet pepper sauce and I've always had a love affair with D'anjou Pears. Hence the Blog name. But it could have just as easily been something to do with my other favorite ingredients, like coconut, almonds, nutmeg, sugar peas, mangoes, chocolate, cilantro, tomatoes, olives, pasta... well the list goes on and on.
Poetry
If ever there was a poetic fruit, pears are it. Possibly pomegranates, strawberries, peaches, grapes, and certainly mangoes. Well, there goes the plug for my poetic pear.
