Poetry

If ever there was a poetic fruit, pears are it. Possibly pomegranates, strawberries, peaches, grapes, and certainly mangoes. Well, there goes the plug for my poetic pear.

Strawberry Green Salad

This salad passes all the tests of flavor, health, and beauty...it is amazing!  (okay, okay... the dressing has quite a bit of oil. and sugar.. but as I've said before, don't make a soup of it... just drizzle a bit on top and you can't go wrong)  All credit goes to my sweet friend Janet R.  You HAVE to try this recipe!!!  


Strawberry Green Salad

Romaine lettuce
Baby Spinach
Sliced Strawberries
¾ c. Slivered almonds
4 Tbsp. sugar
Mix together almonds and sugar over medium heat under sugar is dissolved.  Spread onto wax paper until cool.  Toss together the lettuce, spinach and strawberries.  Sprinkle the nuts on top. 

Dressing
Mix in blender
8 strawberries
3 Tbsp. poppy seeds
1 1/2c. sugar
¼ tsp. garlic powder
2 tsp. dry mustard
2 tsp. salt
2/3c. white vinegar
3 Tbsp. minced onion
2c. oil  


Serving the dressing on the side is a great idea if you plan to have leftovers... but there probably won't be any leftover.  This salad could easily be a meal by adding shredded chicken.
