Poetry

If ever there was a poetic fruit, pears are it. Possibly pomegranates, strawberries, peaches, grapes, and certainly mangoes. Well, there goes the plug for my poetic pear.

Bourbon Chicken

My sister-in-law Sarah is an amazing cook!  She makes healthy eating truly enjoyable.  While Sarah has figured out an even healthier version of this recipe, the one below is the one I've tried, and I absolutely loved it!!!  All three of my kids like it too, and that is a rarity!  Yay for good food!
2 lbs boneless chicken breast, cut into bite size
1-2 tablespoons olive oil
1 clove garlic crushed
¼ teaspoons ginger
¾ teaspoons crushed red pepper flakes
¼ cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
½ cup water
1/3 cup soy sauce

Heat oil in large skillet

Add chicken pieces and cook until lightly browned

Remove Chicken

Add remaining ingredients, heating over medium heat until well mixed and dissolved.

Add chicken and bring to a hard boil.

Reduce heat and simmer for 20 minutes

Serve over rice
